When chef Matt Broussard gets home from a long night of cooking at Palace Kitchen in Seattle, the last thing he wants to do is make another meal. His solution? You guessed it—Freshly.
“Most nights, I don’t get home until 1am, and I haven’t eaten much all night,” he says. “Instead of cooking yet another meal, I pop a Freshly meal in the microwave.”
Here, the Texas native who has cooked with Marcus Samuelsson and been featured on Zagat’s 30 under 30, talks about why he’s a Freshly fan, plus his tricks for taking Freshly meals to the next level.
How does Freshly fit into your busy lifestyle?
My schedule can be insane. The fact that I don’t have to grocery shop makes my life so much easier. The prep is done for me. The cooking is done for me. And they drop the meals right at my place.
What part of Freshly meals appeals most to you?
I love that so many of the meals are high in protein, which helps fuel my workouts. They’re super fresh and balanced, but they’re also comforting. They taste like I made them myself while still helping to keep me fit. I also appreciate that the containers are recyclable.
How do you take Freshly meals to the next level?
As a chef, I know that you eat with your eyes first so I always plate my Freshly meals after heating them up. When I put the meals on a plate, it makes the dish look as good as it tastes.
I’ll also add some of my own elements to the meals. For example, I’ll put a scoop of sour cream and chopped scallions on the chili to turn it into a game-day feast. Or, I’ll tear up some basil and toss it on top of a Freshly pasta dish to add a fresh burst of flavor. If I’m in the mood for extra spice, I’ll throw in jalapeños, chili flakes, or an extra shake of black pepper.
